Since processed foods became popular in the 20th century, the Western diet has been transformed into one that destroys health and is now the leading cause of chronic disease. DR. Robert Lusting is a Professor of Pediatric Endocrinology at the University of California, San Francisco. Dr. Lustig has become a leading public health authority on the impact sugar has on fueling the diabetes, obesity and metabolic syndrome epidemics, and on addressing changes in the food environment to reverse these chronic diseases. His research and clinical practice has focused on childhood obesity and diabetes. According to Dr. Robert Lusting 73 percent of the “food” in a grocery store is not “real food’. It is consumable poison. What is real food? Real food is defined as a substrate that contributes to growth or burning of an organism. Real food is whole with no added ingredients. It grows in the ground, on a bush or tree or it walks or swims. Anything with a food label is not real food. Sugar and ultra-processed foods inhibit growth and burning and cause disease. Dr Lusting has a website called perfact(add link) that offers a very easy to follow food categorization system called the Nova system. It categorizes food into four categories:
Class 1: a whole food: example; apple
Class 2: less whole: packaged sliced apples
Class 3: even less whole: applesauce
Class 4: ultra processed and toxic: apple pie
For optimal health and to avoid disease it’s best to consume only class 1-3 foods. If 7-10 percent of your caloric intake comes from class four foods you should be ok. And if the majority of your caloric intake comes from class one foods you will be healthy, well and thrive. Food is medicine and everything we need to be healthy and well has been provided to us by God and existed millions of years ago before big pharmaceuticals and the food industry found a way to profit off getting us addicted to ultra processed food and than providing pharmaceuticals to alive our symptoms directly related to our uneducated food choices. The data is out there and It’s backed by science. There are many doctors and healers who are providing us with the education and information we need to make changes.
This is a public health epidemic like seatbelts, helmets and nicotine once was. Be the change you want to see in the world. Educate yourself and your children. You can find all the resources you need to make healthy choices at Perfact.
Did you know:
- 93 percent of Americans have inflammation and leaky gut. Fructose(sugar) causes this.
- Ninety percent of the food produced in the United States is sold to you by a total of ten conglomerates—Coca-Cola, ConAgra, Dole, General Mills, Hormel, Kraft, Nestle, Pepsico, Proctor and Gamble, and Unilever.
- The biggest fast food industry nationwide is public schools.
- In the United States, the percentage of children and adolescents affected by obesity has more than tripled since the 1970s.1 In 2017–2018, about 1 in 5 school-aged children were affected by obesity (20.3% of all 6-11 year olds, 21.2% of all 12-19 year olds)1 . The prevalence of obesity among 2-19 year old children was 25.6% for Hispanic children, 24.2% for Black children, 16.1% for White children, and 8.7% for Asian children.1 -CDC
- The prevalence of childhood obesity and metabolic disease in the form of prediabetes, type 2 diabetes, non-alcoholic fatty liver disease (NAFLD), and lipid disorders is a serious problem that continues to grow at an alarming rate and is directly related to the overconsumption of ultra processed foods.
